We are at the gates of Eid Al-Adha and on this great occasion, the demand for meat, especially red meat, increases, and charcoal remains one of the best ways to cook meat. In this article, we will present a method of preparing kofta kebab  skewers from A to Z
One of the characteristics of this dish is that it is not only famous in Morocco, but in the entire Arab world
It is best to use soft meat to get kofta kebab skewers They are very delicious and in order to avoid diseases of the digestive system


:  To prepare kofta kebab skewers we need


  • Half a kilogram of ground meat
  • Four tablespoons of olive oil mixture and vegetable oil
  • Juice half a lemon
  • Medium onion, well chopped
  • One clove of garlic
  • Four tablespoons of chopped parsley
  • Four tablespoons of tomato sauce
  • Two tablespoons of mint leaves well chopped
  • Teaspoon of mush
  • Half a teaspoon of black pepper
  • a small spoon of salt
  • A teaspoon of sweet red pepper
  • Half a teaspoon of ginger
  • Half a teaspoon of turmeric
  • One tablespoon of cumin


:  How to prepare kofta kebab skewers


We take a large pot and put the full amount of minced meat in it and then add minced onions and chopped mint leaves as well then add four spoons of tomato sauce if they are not available can be replaced by a medium-sized tomato grain

After that we add the mush and can be replaced by hot red pepper, then add four tablespoons of chopped parsley and add the crushed garlic clove, as well as add the mixture of olive oil, vegetable oil and half-lemon juice

After that we add spices, start with salt, and add a spoonful of sweet red pepper, a spoon of ginger and turmeric, and add the cumin, and finally the black pepper

After adding all the ingredients, we mix the entire mixture well until the minced meat is well seasoned. After mixing well, cover the container with food plastic and leave it for an hour in the refrigerator until it mixes with each other

After the hour has passed since it was placed in the refrigerator, we start to form skewers. If we use wood skewers, they should be left with water and dried well before cooking in order not to burn.
We start preparing the skewers by taking the amount of three tablespoons of minced meat and then put them in a cylindrical shape with the skewer until they take a cylindrical shape and we continue to form the rest of the skewers in the same way

After that we pass to the last stage, which is cooking. We prepare the electric barbecue or charcoal according to desire and sprinkle the grill with a little oil so that the minced meat does not stick to the grill and turn the skewers on all sides until they are fully cooked
