:    The ingredients we need to prepare roast chicken are
  • A two-kilogram chicken
  • Two medium onions, chopped
  • Two hundred grams of green olives without bone
  • One hundred grams of olive oil and table oil mixture
  • One hundred grams of chicken liver
  • Half a grain pickled lemon, cut into small pieces
  • Teaspoon of turmeric
  • A little saffron
  •   Half a tablespoon of salt
  • A teaspoon of black pepper
  • Tablespoon of ginger
  • Nutmeg
  • Two tablespoons of butter
  • A teaspoon of ghee
  • Four garlic cloves, cut into small pieces
  • Three tablespoons of coriander and chopped parsley
:   How to prepare

We take a concave pot and pour the following condiments: turmeric, ginger, black pepper and a little salt and add four cloves of garlic and add half grain pickled lemon and add parsley and coriander and add three spoons of water and mix the ingredients well

After that we take the chicken after washing it well and we immerse the chicken in the mixture of spices, season it well and leave it for half an hour

After half an hour has passed, we put the pot on the fire and add a hundred milliliters of olive oil and table oil, then add the butter and put the butter until it melts, then add the chicken and let it fry a little and turn the chicken on all sides well

Then add the chopped onions and stir well, stir the chicken on all sides, add the remaining spices, put the chicken on its chest, add half a liter of water, cover  the pot, and put the heat on a moderate temperature For half an hour

In the meantime, we put a frying pan of a small size and put water in it and leave it over the fire to a boil then add the chicken liver chopped into small pieces and leave it for five minutes and then we remove and filter it

After half an hour has passed, we remove the chicken and put it in the oven dish

We put it in the oven for twenty minutes at a temperature of one hundred and eighty degrees. As for chicken broth, we add the liver to it after filtering it, and we add olives and leave the broth until it is concentrated on a quiet temperature

Then we serve the dish, which can be decorated with thin pieces of lemon peel, or as per the desire of each person
